Desarma, the restaurant armed with simplicity

This is a fine dining restaurant signed by the renowned Madeiran chef, Octávio Freitas. But with a promise of a simple and purified cuisine, based on the most traditional natural products. Disarming.

Desarma restaurant opened its doors in the Spring of 2023, at the renovated hotel The Views Baía, in Funchal. The most stylish hotel of the group The Views, an adults-only resort, required a restaurant to match, surprising, and the challenge for its accomplishment was presented to Octávio Freitas, group’s Executive Chef for 14 years and a 25-year professional career.

Renowned for his creativity and his continuous ability to reinvent, Octávio Freitas  – who grows his own organic vegetable gardens, is dedicated to researching and studying the island’s typical ingredients and even released his first wine produced from the vineyards from his own property , according to his testimony for BestGuide Madeira  – the chef excelled and presents in his new place a real offensive of originality and simplicity.

A battle of senses

Weapons are plain to see, on the table, but this doesn’t mean that they aren’t able to trigger an army of senses. Either from the à la carte menu, or from the 6 or 9 course menus, no less than an explosion of flavours can be expected.

Arising from the Madeiran culinary heritage and made with regional ingredients in its purest state, we found in these menus, suggestions such as the black scabbard fish roes, the dry limpets, the trout from Seixal, the brisket. Simple food, “as it is and not as we wished it was”, as pointed out by its author.

The menus may include wine pairing which obviously turns the experience even more special.

In a fitting venue

The new gastronomic fort of Funchal rises on the top floor of The Views Baía hotel, providing breathtaking views of the city.

The atmosphere, designed by Atelier Nini Andrade Silva, is luxurious and at the same time serene, supported by materials such as copper, stone, and natural products. The kitchen is opened to the dining room like a stage and there are 12 counter seats assumed as the Chef’s Table.

Therefore, we find here gathered all the weapons to turn this restaurant into a prominent one in Madeira Island and from which many glories are expected.
